Your interpretation is correct. The rosters were the team rosters during the lockout, I think. They aren't up to date.

most roster moves made after the lockout ended will not be changed until the first roster update when the game comes out

No speed outside of Cribbs, Joe Thomas is the highest rated player on the team ahead of peyton hillis. Haden has solid stats that will for sure go up if he keeps preforming like he did last year.
