  • Starting the week of August 29 and for as long as we want monthly we are getting  PACIFIC SALMON and later WHITEFISH from the WILD ALASKAN COMPANY sent to us packed in dry ice of the good stuff.  We're starting with twelve 6-8 oz. servings of Coho and Sockeye salmon and later five different whitefish  -or- various crab, scallops or whatever at an additional cost -and- of course great for any GAMEDAY.

    We haven't forgot about our delicious steaks, chops, chicken and pizza but I'm really on this high protein eat well menu which now includes east to cook GRILLED SALMON mmm-mmm good.  So rather than buying it pack at a time it's the monthly plan...... we'll see how it goes !

    Cucumber salad with Briana's buttermilk ranch dressing for an appetizer.

    Grilled salmon and pork shish kabobs with Spanish rice.

    And for dessert I'm having my wife's homemade blueberry muffins........OMG !

  • Our GOOD OL' TUNA NOODLE CASSEROLE a favorite old recipe that is easy to make and delicious for any meal even before GAMEDAY.   We might cook up some sausage ? on the grill and have a casserole for a get-together.

    SERVES.  6.   COOK TIME. 30. MINUTES

    Our Good Ol' Tuna Noodle Casserole is a comforting classic that first become popular in the 1950s. Our version has the same mouthwatering flavors, but we've added a few shortcuts, so that you have more time to spend with the family. This tuna noodle casserole has a nostalgic feel, and you might just find all those childhood memories coming to join you at the table.

    What You'll Need to have......oh we have a few tweaks to this classic recipe.  My wife adds some chopped celery, optional.

    • 1 (12-ounce) package wide egg noodles
    • 2 (10-3/4-ounce) cans cream of mushroom soup
    • 1 1/2 cups milk
    • 1 (12-ounce) can solid tuna in water, drained and flaked
    • 1 cup shredded Swiss cheese....... we don't use cheese just add mayonnaise, optional.
    • 1 (13-ounce) package frozen peas
    • 2 tablespoons butter, melted
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 cup French-fried onions.......we like to use bread crumbs also optional.

    What to Do

    1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
    2. Prepare noodles according to package directions; drain.
    3. In a large bowl, combine soup and milk; mix well. Add noodles, tuna, Swiss cheese, peas, butter, salt, and pepper. Pour mixture into prepared baking dish then top evenly with French-fried onions.
    4. Bake 30 to 35 minutes or until bubbly and heated through. Serve immediately.

    Test Kitchen Tip

    • When it comes to the tuna, we think this is best with white solid tuna packed in water. It seems to give it the freshest taste. Yes, it’s a bit more expensive, so if you prefer, chunked in oil will work. The choice is yours.

  • I send our recipes out to about 26 friends and family my next door neighbor made the tuna casserole and just brought some over to us for dinner....... still warm !

  • HOMEMADE PHILLY CHEESE STEAK SANDWICHES, an old favorite  for GAMEDAY parties or tailgating.  Mmmm-mmmm

     
    YIELDS: 4.   PREP TIME:  20 MINUTES. TOTAL TIME: 45 MINUTES
     
    INGREDIENTS
     
    2 tbsp. extra-virgin olive oil, divided
    2 green peppers, thinly sliced
    2 red peppers, thinly sliced
    1 large yellow onion, sliced
    Kosher salt
    1 1/2 lb. sirloin steak, thinly sliced
    Freshly ground black pepper
    8 slices provolone
    4 hoagie rolls
     
    DIRECTIONS
     
    In a large skillet over medium heat, heat 1 tablespoon oil. Add peppers and onion and season with salt. Cook, stirring often, until caramelized, 12 to 15 minutes.
     
    Remove onions and peppers from skillet and set aside. Add remaining tablespoon oil and cook steak until it has almost reached your preferred doneness, about 5 minutes. Season with salt and pepper.
     
    Return veggies to skillet and toss to combine with steak. Blanket mixture with provolone and cook, covered, until the cheese is melted, about 3 minutes more. Divide mixture among hoagie rolls and serve.

    The Longhorn Steakhouse has their Maverick steak sandwich using prime rib...... excellent.

    A Philly cheese steak with rib eye is also a great sandwich.

    I have to have provolone in mine....... but have been known to eat Philly's with other meat and cheese combos !

  • BAKED MACARONI AND EGGPLANT ?  NEAPOLITAN good for GAMEDAY or any other regular dinner.  Done in about 40 minutes and maybe grill up something  for a tailgating party.    GO BROWNS !
     
     

    Baked Macaroni and Eggplant Neapolitan is like eggplant parmigiana and baked ziti all rolled into one. Every mouthful is pure delight! We can't get enough of this truly Italian way to chow down; so don't wait to bring this easy macaroni and eggplant recipe to your dinner table!         SERVES 6.    COOK TIME. 40. MINUTES

    What You'll Need

    • 16 ounces ziti pasta
    • 1/2 cup vegetable oil, divided
    • 1 eggplant, peeled and thinly sliced
    • Salt for sprinkling
    • Garlic powder for sprinkling
    • 1 (24-ounce) jar spaghetti sauce, divided
    • 2 cups (8 ounces) shredded mozzarella cheese, divided
    • 1/3 cup grated Parmesan cheese, divided

    What to Do

    1. Cook ziti according to package directions; drain well and set aside.
       
    2. In a large skillet, heat 2 tablespoons oil over medium heat until hot, but not smoking. Sprinkle eggplant lightly with salt and garlic powder. Cook eggplant in batches 2 to 4 minutes or until browned on both sides. Place eggplant on a paper towel-lined platter.
       
    3. Preheat oven to 400 degrees F. Coat a 9- x 13-inch baking dish with cooking spray. Reserve 1 cup spaghetti sauce; combine remaining sauce with cooked ziti. 
       
    4. Layer half the ziti mixture in prepared baking dish, then 3/4 cup mozzarella cheese, half the eggplant, and 2 tablespoons Parmesan cheese; repeat layers. Top with reserved 1 cup spaghetti sauce, and remaining Parmesan cheese.
       
    5. Bake, uncovered, 30 minutes, remove from oven. Add remaining 1/2 cup mozzarella cheese and bake 5 more minutes or until heated through.

    Well yesterday I deactivated our membership for the Wild Alaskan Company and the 8 Sockeye and 4 Coho salmon delivery service.

    Sizes supposed to be 6-8 oz ours were all 6 oz and cost  double or better than our local supplier costs -AND-  did not taste as good, just ok not great.

    Well (as expected)  they emailed me back and offered us $25 off our next two orders.......eh, no.  Still about $116 for 12 pieces of 6 oz salmon. Still no.

    To tell you the truth I was disappointed,   I expected better.  Oh well and we move on............still more fish ? to grill out there !

    2. In a small bowl, combine salt, black pepper, 1/4 teaspoon cayenne pepper, the onion powder, and paprika; mix well. Sprinkle catfish fillets evenly on both sides with spice mixture.

    I don't know.  I always learned have to have corn meal when you fry cat fish.

    And yet some people like catfish even farm raised like they use here.

    I haven't eaten catfish in many years but I thought I'd give it a try again....... but I don't know if my wife wants to go yet.

    You can't be a southerner.  Catfish cooked right is damn good!
