      Simple recipe - potato fritters

    3 large potatoes, peeled, shredded

    1 xlarge egg, 2 otherwise

    3 tbs flour

    1/2 tsp baking powder

finely chopped onions if you want, bacon bits if you want.

fry  in patties, I like them browned a good bit and crunchy on the outside

I forgot to add a bit of instructions needed.

The shredded potatoes should be rinsed in water, once or twice, til the water is clear.

This will get a lot of the starch out of your mix. Then drain well, even scrunch the shredded potatoes to get most of the water out. At this point, I use paper towels to push on them to get even more water out. I usually use peanut oil for frying - higher fry temp and a bit healthier than other seed oils, like canola/sunflower/etc.

I have heard using ghee or regular butter works well to brown them, but I don't know, haven't tried it.

    Ghee wiz.

The concept of “controlling the moisture” is one l’ve taken to heart with cooking. Definitely a must for frying potatoes.

Thanks for the tip on using peanut oil.

  • Today is a great day for Matzo ball Soup!

  • I love matzo ball soup! We made a batch a few weeks ago. Did you use a box or make it from scratch? I’ll admit l usually just make it from a box, Manischewitz brand typically.

Yup Manischwitz... Dare I say.. Its deli quality worthy... Diamonds at Richmond mall had the best back in the 70's and early 80's.. I always get it when I'm at Manhatten Deli here on the east side... That and a corned beef and swiss.. i could probably eat that every day just about... Matzo Ball soup is a thing unto its own.. Often reffered to as "Jewish Penicillin" I love it to death..

  • Interesting gravy for bisquits -

I make it the same way, with Jimmy Dean Sage sausage instead of

    the onions and hamburger.

Kent Rollins is pretty good... I've seen him on youtube a mess of times.. Poor guy had a stroke a few months back but he's still rolling along.. Me myself I prefer Bob Evans... Jimmy Deans just goes overkill on the sage for me...

Oh? What kind of onion? I’m thinking Vidalias would work best.

@texasag1969, don’t you have some special spicy onions down there in Texas? I recall reading about them and l want to get my hands on some at some point.

  • Meeting some friends out in Youngstown this evening, going to the infamous Royal Oaks. (If you know, you know) Raspberry BBQ sauce for the win, yo.

Can’t go out to Youngstown without thinking of our dearly departed mjp. He was a positive influence on this board who is about the only person I know that loves food as much as me. Miss the guy.

He’d be happy that this thread continues. Thank you to all the people that keep it going. Great way to honor our friend.

Reeled me right in with Raspberry BBQ sauce.  Yeah, MJP was an easy guy to get along with. I never knew how sick he was until it was too late.  The guy never complained about anything unless someone showed up only to troll the football board.

He had so many hospitalizations for infections in those deep wounds that I figured sooner or later as he got older one of them would finally be one too many. Just a shame he had to deal with it for so many years.

It just felt like even with all his hospital stays over the years he’d be around forever.

The Royal Oaks is an interesting place. Not exactly a family friendly joint. Still, ten wings, onion rings, hot pepper cheese bites, a Miller Lite and a Coke cost me $20.97.

Exactly Dutch!  He'd either talk about what he and his wife would eat when he got out or catching his favorite teams on TV at home again.

That's some attractive prices at The Royal Oaks especially if the food is good!!!

Bar Rescue is how I heard about the place. The brothers were there Saturday.

  • Here's a idea. I have dehydrated cut up garlic cloves, and ground them into dust, with a coffee grinder - as I mentioned before. You can also do it for hot/mild/sweet peppers - I recently did it with red bell peppers. Make your own organic? fresh ground pepper. Most vegetables. I tried dehydrating a batch of sweet peruvian onions, that was a nasty disaster.

But for most things, you could make your own steak rub, etc. Spice up hamburgers. The dust keeps for months if not years. Make fruit and vegetable dust for smoothies.

Grate some pickles up and add some favorite dusts and make a quick hotdog relish.

btw, you can dehydrate ***frozen*** store-bought vegetables, but fresh vegetables must be blanched. Fruits don't have to be. Store bought frozen veggies are already blanched.

also btw, it's dandelion season, time to make -organic- dandelion dust, and dandelion jelly batches. and dandelion roots/chickory roots dust to make a coffee substitute with. Dandelion blossom jelly rocks !

I make my own chili powder with a spice grinder/coffee grinder. It’s a time consuming process.

The rough ratio l use is as follows.

    4 dried ancho chili peppers

    2 dried chis de arbol

    1 TBSP of cumin seeds

    1 tsp dried Mexican oregano

You can mix and match with other dried chilis as well.
