But did you know it actually got its name from Bourbon Street in New Orleans? Whether you're serving it Mardi Gras-style or with an Asian twist, this flavorful chicken dish is simply delicious and incredibly easy to make. Give these Bourbon Chicken Bites a try when you're craving something that tastes like perfection!What You'll Need
- 2 pounds boneless, skinless chicken breasts or thighs, cut into 2-inch chunks
- 2 tablespoons cornstarch
- 1 teaspoon garlic powder
- 1/4 teaspoon ground red pepper
- 1/2 teaspoon salt
- 1/4 cup canola oil
- 1 cup jalapeno pepper jelly
- 1 tablespoon light soy sauce
- 2 tablespoons bourbon
What to Do
- In a medium bowl, combine chicken, cornstarch, garlic powder, ground red pepper, and salt; toss to coat well.
- In a large skillet over high heat, heat oil. Add coated chicken in batches and cook 6 to 8 minutes, or until golden and no pink remains, stirring frequently.
- In a large saucepan over medium heat, bring jelly, soy sauce, and bourbon to a boil. Cook 2 to 3 minutes, or until jelly has melted, stirring constantly. Add chicken and toss to coat. Serve hot.

One of my favorites ! It just sounds good PARMESAN SMASHED POTATOES. Tender on the inside, crispy and golden on the outside. Done in about 45 minutes. And even better than the old parsley buttered potatoes !
Here's a side dish that's simply "smashing"! (No, really). Our Parmesan Smashed Potatoes are crispy on the outside, tender as can be on the inside, and full of flavor throughout. Plus, did we mention how much fun it is to smash these?!
What You'll Need
- 2 1/2 pounds small potatoes (about 12)
- 1/2 stick (1/4 cup) butter, melted
- 3 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons Parmesan cheese
What to Do
- In a large saucepan over high heat, place potatoes in enough water to cover; bring to a boil. Once boiling, reduce heat to medium and simmer about 20 minutes, or until potatoes are just tender. Drain and let cool slightly.
- Preheat oven to 450 degrees F. Coat 2 baking sheets with cooking spray. Place potatoes on baking sheet. Using a large spoon or the heel of your hand, gently press down on each potato to smash it, so it ends up about 1/2-inch thick. Make sure to keep each potato in one piece.
- In a small bowl, combine butter, garlic, parsley, salt, and pepper; mix well. Brush mixture over potatoes, then sprinkle with Parmesan cheese.
- Bake 15 to 20 minutes, or until potatoes are crispy and golden.

My contribution to the Souper Chili bowl is going to be some shredded barbecue beef. As you realize- all you need is a crock pot, prep time 5 minutes, tossing a three pound chuck roast in with assorted ingredients, set on low and forget about it for 8 hours.
Wife wants me to make a (small) batch of our stuffed mushrooms- that's a little more involved. Sautéing the destemmed 'shrooms in butter and crushed garlic, with a little white pepper and added brandy... Then stuffing them with cream cheese with chives, top with bacon and Italian blend cheese, bake until cheese is melted.
There will be much wailing and gnashing of teeth among the sizable Bengals contingent at our Super Bowl Party if they manage to lose. But they can drink heavily if that's the case.. this was from a previous Super Bowl extravaganza... MHO is it's the Bengals shaky o-line against Aaron Donald and the Rams D.

Jimmy Johns is a joke mjp. Ditto Subway- (the McDonalds of subs)... Penn Station blows them out of the water, you get what you pay for. In my working years... We got saddled with a TSR who loved Jimmy Johns.. Freaky Fast, and Freaking mediocre. In my one trip to headquarters in Warren New Jersey.. They offered to drive me into NYC for dinner... On one condition... Peter Lugers. Sadly, unless you play for a NYC sports team, we can get you a reservation in three weeks.
Um... Jimmy Johns on YOUR corporate nickel isn't my idea of a decent dinner.

need some good coffee to go with all these food ideas.
I got rid of our coffee maker bout 3 years ago. I cook up cowboy coffee - friends really think it's great.
...a stainless steel one for in the house, and a high quality stainless steel mini-perc one we bought at
a great well-known frontier mini-mall place in S. Dakota called "Wall Drug". Rarely does any place serve coffee this good, imho:

∆ interesting and informative read from Cal on the above "How to Make Cowboy Coffee" video, I ended up watching the whole 14:34 on it.
Reminds me of cooking on a real authentic wood stove in the fall or winter at scout camp -but- it would apply to the campground, backyard or in your kitchen.
And almost everyone likes coffee either by itself or with a meal. Check it out. ✓

Any time is a good time for beer. I don't drink anymore because when I started to take that attitude with Bourbon my liver started to revolt. When quitting alcohol became a reality, either by self choice or kicking the bucket, the choice became easy. I am happy to report all the liver functions are back in the good range. It's been 18 months since I had any alcohol.
I miss it sometimes, but I don't miss being sick so it is what it is. I like to talk about it from time to time because it helps. Thanks.

Well the 2021-2022 NFL football season is pretty much over -but- the 2022-2023 season is just kicking off ! This is all leading up to the 2022 NFL Draft on April 28-30 in Las Vegas.
So we still have to eat ! Here's a tasty recipe done in 25 minutes.
◆ ALL-AMERICAN SKILLET GOULASH ◆ well the word goulash can mean different things to different people. This recipe is ground beef with elbow macaroni and plenty of sauce and Cheddar ? cheese in a quick and easy skillet version. Served up with a small salad and some buttered Italian bread ummm-ummm. This is one to copy to your recipe file. ★ And check

SERVES 4 COOK TIME 25 MINUTESAll American Skillet Goulash takes a few tasty liberties with traditional goulash and makes an all American goulash that's praise-worthy. Wait 'til you taste our budget-friendly, skillet version that is pure hearty comfort food.
What You'll Need
- 1/2 pound elbow macaroni
- 1 1/2 pounds ground beef. ◆
- 1/2 green bell pepper, chopped
- 1 small onion, chopped
- 1 (28-ounce) jar spaghetti sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup (4 ounces) shredded Cheddar cheese
What to Do
- Cook macaroni according to package directions; drain and cover to keep warm.
- In a large skillet over high heat, brown the ground beef, bell pepper, and onion 6 to 8 minutes or until no pink remains in the beef, stirring frequently. Drain off excess liquid.

With the weather this year we had a bumper crop of my wife's herbs, we would cut them back and they kept growing back. We were giving whole branches and even a few plants away to anyone who wanted them. Now on to Saturday's GAMEDAY MEAL with a few leftovers for today.
The wife got chicken thighs, skinned them, dried thouroughly, dipped in a Grey Poupon mustard and melted butter dip, coated in panko breadding, added more dip on top to get crunchy and just enough of her homemade and dried herbs......in the oven about 35 minutes. Fantastic! (May do recipe if anyone is interested.)
She made a risotto with a creamed asparagus and herb mix. (She makes her own herb mixes out of various combinations like the store bought rubs. And not a fortune!) Now I'm not a big rice guy but it was great!
Her oven roasted carrots as a side, always good. Apple pie ala mode for desert.
Chicken thighs and risotto tonight's snack. Ummmmmm.
