Longhorn Steakhouse has their ◆ Maverick prime rib steak sandwich ◆ about $13 and worth it ! And a great GAMEDAY sandwich ½ or whole. In fact my wife will be out shopping this will be my to-go takeout with their potato soup.
Not a jcam prime rib -but- one of mjp's favorites a big step up from a Philly steak sandwich.

Planning a Final 4 party or maybe a welcome back MLB.....well maybe not there -but- here's one of my favorites for any get-together or supper ! And cook time only 10 minutes, you can't beat that and save some money too.

SERVES 4 And in only 10 MINUTES COOK TIME.Big flavor, little time. Now that's a combination we will always love. This Mongolian Beef recipe is a take-out classic. Grab your chopsticks (or your forks, if you prefer) and chow down on this tasty, homemade dish with your family.
What You'll Need
- 1 tablespoon cornstarch
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon hoisin sauce (see Note)
- 2 tablespoons vegetable oil
- 1 1/2 pounds boneless top sirloin, cut into thin slices
- 4 scallions, cut diagonally into 1-inch slices
- 4 cups cooked rice, warmed
What to Do

In a medium bowl, whisk cornstarch, broth, soy sauce, sesame oil, and hoison sauce; set aside.

In a large skillet or wok over medium-high heat, heat vegetable oil until hot. Add beef and stir-fry 2 to 3 minutes, or until no longer pink. Remove from skillet.
- Add broth mixture to skillet and heat until thickened. Add beef back to skillet along with scallions, and heat 2 minutes, or until heated through. Serve over rice.

Don't let the hoisin sauce in this simple stir-fry scare you. You can find it at your local supermarket in the Asian food section. It's a sweet and spicy sauce that adds big flavor to the dish and will keep in the fridge for the next time you need it.

SERVES 6 COOK TIME 10 MINUTESEver wonder how easy it is to make homemade wontons? Now you'll know, 'cause our easy Wonton Soup includes homemade pork wontons that you can put together in no time.
What You'll Need
- 1/4 pound ground pork
- 3 scallions (green onions), thinly sliced, divided
- 1/4 teaspoon ground ginger
- 1/8 teaspoon garlic powder
- 1 dozen wonton skins
- 1 egg, beaten
- 5 1/4 cups chicken broth
- 1 1/2 cups water
- 1 tablespoon soy sauce
- 1/4 pound sliced fresh mushrooms
What to Do

In a medium bowl, combine ground pork, one-third of the sliced scallions, the ginger, and garlic powder; mix well.

Place wonton skins on a work surface then place 1 teaspoon pork mixture in center of each. Brush beaten egg around edges of a wonton skin then fold in half diagonally to make a triangle.

Fold 2 opposite points up to top point and seal with a dab of beaten egg; fold down top edge toward you and secure with another dab of beaten egg. Repeat with each remaining wonton.
- Meanwhile, in a soup pot, combine chicken broth, water, soy sauce, and mushrooms; bring to a boil over medium-high heat. Carefully drop wontons into soup along with remaining sliced scallions; cook 10 to 12 minutes, or until wontons are tender.

I also get 12 can cases of spinach, French style green beans and others. No lugging all that home -but- keep an eye on costs, some locals have nice sales.....on ever rising food costs.
It's not hard to eat well and really enjoy it so bon appetit !

SERVES 32 COOK TIME 35 MINUTES
If the gang is used to you serving plain cocktail meatballs on game day, you better make extra this time, 'cause they're likely to eat a bunch more of these Sweet and Sour Meatballs...even before the game officially begins!
What You'll Need
- 2 pounds ground beef
- 1 egg
- 1/4 cup water
- 1/4 cup dry bread crumbs
- 1 teaspoon salt
- 1/2 teaspoon onion powder
- 1/8 teaspoon black pepper
- 1 (12-ounce) jar cocktail sauce
- 3/4 cup grape jelly
- 2 tablespoons fresh lemon juice
What to Do

In a large bowl, combine ground beef, egg, water, bread crumbs, salt, onion powder, and pepper; mix well. Form into 1-inch meatballs and set aside.
- In a soup pot, mix together cocktail sauce, jelly, and lemon juice. Bring to a boil over high heat, then add meatballs. Reduce heat to low, cover, and simmer 30 to 35 minutes, or until meatballs are cooked through.

SERVES 6 COOK TIME 35 MINUTESIf your family can't decide between Italian or Mexican food, then we've got the perfect solution, Tex Mex Ziti! This beefy and cheesy casserole combines the best of two cultures in just one dish. Not only will your whole GAMEDAY SPORTS gang -or- just your family will be pleased, but you will be too, 'cause this recipe is weeknight-easy!
What You'll Need
- 1 (12-ounce) package ziti
- 1 pound ground beef
- 1/2 onion, chopped
- 2 cups spaghetti sauce
- 1 cup salsa
- 1 (15-ounce) container ricotta cheese
- 2 cups (8 ounces) shredded Mexican cheese blend, divided
- 2 tablespoons chopped fresh cilantro or parsley
What to Do
-
Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.

Prepare pasta according to package directions. Drain, rinse, and drain again; set aside in a large bowl.

Meanwhile, in a large skillet over medium heat, brown beef and onion 5 minutes; drain off excess liquid. Add to drained pasta along with spaghetti sauce, salsa, ricotta cheese, and 1 cup cheese; stir until well combined. Spoon into prepared baking dish.
- Bake 25 minutes. Remove from oven and sprinkle with remaining cheese. Return to oven and bake 10 more minutes, or until cheese is melted. Sprinkle with cilantro just before serving.
Notes
- For additional ethnic flavor, we suggest that you might want to add a drained can of green chilies, jalapeño peppers, or black olives when you combine all of the ingredients.

Add cans of tomatoes and okra. Let simmer for 1 hour or more to meld flavors.
The key to hot sauce is to improve flavor, not make things hot. Any idiot can make things hot. The key to being a good chef is to make things better. As a Cajun dish it is going to have some heat, but if you make something and more than 1-2 out of 10 people(adults) think it is too spicy, you failed. People can always kick up the heat to their taste. You can't take it out.
I like Crystal hot sauce. It's what you find in most of the N.O restaurants. It is fairly mild in the way of heat but big on pepper flavor. Try some.

Saturday April 23. Today's menu :
Garden spinach and lettuce salad, either *buttermilk ranch -or- Greek salad dressing. Olives and artichokes * i went with the buttermilk ranch.
Then grilled salmon with asparagus, oh yeah !
The perfect Saturday afternoon, checking email, watching CLE at NYY and salmon on the grill.

...... oh BTW the grilled salmon and everything else was excellent today ! Ummm-ummm.
