  • Well 2020 was a year to forget and a lot of things changed including our sports and eating habits.  Less live sports with tailgating and parties and more cooking and eating at home.  I've kind of changed my GAMEDAY recipes and grilling stuff accordingly. -but-. will be upgrading them as the seasons change.

    One thing too we have had or will have tried all of the recipes here including ideas from all of you.  Here's one of our favorites, this recipe is from Mr Food but we've used others.

    5-Minute Beef Stir Fry truly good for any GAMEDAY or any day of the week.  Why get takeout ?

    5-MINUTE BEEF STIR FRY made fresh in your own wok or skillet over rice.

     
    SERVES. 4. COOK TIME. 5 MINUTES
     

    You only need five minutes to make this homemade Chinese recipe taste take-out worthy, so grab your wok (or a skillet!) and some fresh ingredients and get ready to impress your whole family. One taste and you'll never order Chinese take-out again!

    This recipe proves that learning how to make beef stir fry is easier than you might think. It's amazing what fresh ingredients can do! We think you'll enjoy preparing this meal so much that you'll wonder why you didn't make it sooner. The good news is that, since it only takes 5 minutes to make, you and your family can enjoy this stir fry beef as often as you want. It's truly a crowd pleasing (and cook pleasing) dinner!

    What You'll Need

    • 2 tablespoons vegetable oil
    • 6 to 8 slices fresh ginger
    • 2 cloves garlic, minced
    • 1 pound boneless top sirloin, thinly sliced across the grain. (you can substitute your favorite steak here)
    • 1 red bell pepper, thinly sliced
    • 8 ounces fresh snow peas, trimmed
    • 1 onion, cut into 1/2-inch wedges
    • 2 tablespoons soy sauce
    • 2 tablespoons rice vinegar
    • 1 tablespoon light brown sugar
    • 1 teaspoon cornstarch
    • 2 cups warm cooked rice

    What to Do

    1. In a wok or large nonstick skillet over high heat, heat oil until hot. Add ginger, garlic, and beef; cook 2 minutes, or until beef is browned. Add red pepper, snow peas, and onion and continue cooking 2 to 3 minutes, or until vegetables are crisp tender.
    2. In a small bowl, whisk soy sauce, vinegar, brown sugar, and cornstarch. Pour into wok and cook until sauce thickens. Serve over rice.

  • Oh yes we have a winner !   I love ❤️ hot dog shops with very reasonable prices......they should try and franchise into the Cleveland BROWNS area !

  • I see a gold mine of opportunity for someone with a little ambition to franchise this..... but do check out the existing names and competition first -but- hot dogs sell.....and good profit margins !

    This is DEFINITELY GAMEDAY food !

    Reminds me of our local hot dog shoppe here in Girard Ohio.......

    SERVES  6. COOK TIME. 3 HOURS 10 MINUTES

    Nothing says St. Patrick's Day like this Classic Corned Beef and Cabbage recipe. You don't have to be Irish to enjoy a taste of fork-tender corned beef with a hearty helping of potatoes, carrots, and cabbage. Now that's what we call dinnertime goodness!

    What You'll Need

    • 1 (3- to 3-1/2-pound) corned beef brisket with pickling spices
    • 8 cups water
    • 4 potatoes, peeled and cut into quarters
    • 4 carrots, peeled and cut into 2-inch chunks
    • 1 green cabbage, cut into 2-inch wedges

    What to Do

    1. In a large Dutch oven over high heat, bring corned beef with pickling spices and water to a boil. Reduce heat to low, cover, and simmer 2-1/2 hours, or until almost fork-tender.
    2. Add potatoes, carrots, and cabbage to corned beef and continue cooking, covered, 25 to 30 minutes, or until vegetables and corned beef are fork-tender.
    3. Place corned beef on a cutting board and slice across the grain. Serve with vegetables.

    Common Questions About Corned Beef

    So your corned beef is in the pot, you've checked it with a fork, but you're scratching your head wondering if it's "fork tender" and asking yourself "How do you know when corned beef is done cooking?" Well, the answer is simple! If you have a meat thermometer handy, insert it into the meat (being sure not to touch the sides or bottom of your cooking pot!), and check the internal temperature. Corned beef should be cooked to a minimum of 145 degrees Farenheit for the ideal tender, juicy result. 

    Another very common question is "Do you rinse corned beef before cooking?" And the answer is yes, absolutely (unless you want a very salty result). Don't worry that this will rinse away all the flavor, though! All you're doing is removing the excess salt which has been infusing the meat with loads of flavor, up until cooking time--it's supposed to be removed before going on the heat! That little seasoning packet will continue adding plenty of delicious flavors to your recipe as it cooks, and you won't miss that excess salt.

  • I always like themed tailgates.  As we get in to the season, I may add some tailgate options that highlight our opponents city.

  • in my search for the perfect biscuits, I'm finally happy that I have the biscuits.

    But I have the same search going for the perfect cornbread, and they either have no taste

    or too crumbly. not good.

    Biscuits :

    2 cups soft white flour

    1 tbsp baking powder (the good stuff)

    1 tsp salt (might cut back on the salt a bit since I melt good salted butter on them after baking)

    1/4 cup crisco butter flavored shortening (prefer all vegetable)

    3/4 cup buttermilk or 2/3 cup milk. (I had to use the 2/3 cup with a half tsp apple cider vinegar - worked terrific).

    next time I"ll try buttermilk.

        cornbread. I used to make Hawaiian cornbread, but it was more like a sweet cake. Not what I want with bbq ribs or a plate

    of ham and beans. Just can't get it right. Too much or all corn meal - way too crumbly. no sugar/too much flour... - loses taste.

  • I tried out my oven fried Yucca root and learned a lesson. Flip them over halfway through or the bottom tends to overcook a bit more than the top. Still they were very good with the hard bottoms. My brother comes to town tomorrow and I will be cooking them again since he also grew to like them when we lived in Venezuela. He'll be pleased with experiment #2.?

    fry up some ground sausage  in a pan and drain one package i usually use bob evans.  mix in one can of rotel and one package of cream cheese it will blow your mind and its simple.

    1 package ground sausage

    1 can rotel

    1 package cream cheese

  • My favorite for best & easiest dip.....Key to this is NO salsa or tomatoes. Trust me, it's addictive!

    1 lb roll of Bob Evans sausage (original in the white pack)...browned & crumbled

    1 pack of Velveeta Mexican Cheese (cubed)

    1 can ceam of celery soup

    Combine all & microwave & stir at 2 minute intervals.

    I serve with Shearers yellow tortilla rounds, but Scoops, etc work fine too.

    Cheesesteak Stuffed Peppers

    A Philly favorite with a twist!   I love Philly Cheesesteaks and it follows with our quick and easy and good to eat meals with veggies.

    YIELDS: 4.     SERVINGS PREP TIME: 0 HOURS 10 MINS.     TOTAL TIME: 0 HOURS 35 MINS

    INGREDIENTS

    4 bell peppers, halved
    1 tbsp. vegetable oil
    1 large onion, sliced
    16 oz. cremini mushrooms, sliced. (you can substitute your favorite Philly Cheesesteaks mushrooms like baby bellas, button, etc.)
    Kosher salt
    Freshly ground black pepper
    1 1/2 lb. sirloin steak, thinly sliced
    2 tsp. Italian seasoning
    16 slices provolone
    Freshly chopped parsley, for garnish

    DIRECTIONS

    Preheat oven to 325º. Place peppers in a large baking dish and bake until tender, 30 minutes.

    Meanwhile, in a large skillet over medium-high heat, heat oil. Add onions and mushrooms and season with salt and pepper. Cook until soft, 6 minutes. Add steak and season with more salt and pepper. Cook, stirring occasionally, 3 minutes. Stir in Italian seasoning.

    Add provolone to bottom of baked peppers and top with steak mixture. Top with another piece of provolone and broil until golden, 3 minutes.

    Garnish with parsley before serving.

    What to Do

    For your next party, place any or all the toppings listed for each city’s specialty hot dog in individual serving dishes along with a decorative card listing instructions on how to “Build Your City Dog” for each city. Everyone will “go to town”!


    CHICAGO DOGS
    Arrange your hot dog exactly like they do in the Windy City. Place a steamed or grilled hot dog in a bun. Add:

    • Yellow Mustard: Squirt mustard directly on hot dog from one end to the other.
    • Relish: Add a generous amount of sweet relish.
    • Chopped Onions: Place onions on top of the hot dog.
    • Two Tomato Wedges: Place tomatoes along the crevice between the top of the bun and the hot dog.
    • Pickle Spear or Slice: Place pickle in the crevice between bottom of bun and the hot dog.
    • Two Sport (pickled) Peppers: Place two sport (pickled) peppers on top of the hot dog.
    • Celery Salt: Sprinkle a dash of celery salt over the hot dog.


    NEW YORK HOT DOGS
    A “Big Apple” favorite, hot dogs topped with Pushcart Onion Sauce are sold by vendors on the sidewalks of New York City:

    • Place a steamed or grilled hot dog in a bun.
    • Top with spicy brown mustard and Pushcart Onion Sauce made from onions stewed in tomato paste or sauce.


    KANSAS CITY HOT DOGS
    This hot dog celebrates the Reuben Sandwich and is a staple at Kauffman Stadium in Kansas City:

    • Place a steamed or grilled hot dog in a sesame seed bun.
    • Top with shredded Swiss Cheese (the heat of the hot dog melts it to perfection) and sauerkraut.


    ATLANTA HOT DOGS
    Drag your hot dog “through the garden” just like they do in Atlanta:

    • Place a steamed or grilled hot dog onto a top sliced bun.
    • Top it with fresh homemade coleslaw or store-bought.


    DETROIT HOT DOGS
    Detroit “Coney Island Hot Dogs” are named in honor of the Coney Island section of Brooklyn, New York, where hot dogs were originally popularized. These have a Michigan spin to them:

    • Smother with all-beef chili, chopped raw white onion, yellow mustard and shredded Cheddar cheese.

    You occasionally hear that term in the food world both regionally and across the globe.

    It's short for "no freakin way will I eat that stuff".    Toledo dog I got a kick out of that one.   😆
