  • Party coming up or just want a filling supper try CHILI MAC AND CHEESE even good for a GAMEDAY dish.  An easy meal and let your oven do the work.

    Talk about taking comfort food to a whole new level. This recipe combines two tried-and-true favorites: chili and macaroni and cheese. The result is one beefy, cheesy, casserole that's good till the very last bite. Oh, and did we mention it's got a crispy topping?

    What You'll Need

    • 1 pound elbow macaroni
    • 1 stick (1/2 cup) butter
    • 1/4 cup all-purpose flour
    • 1 teaspoon ground mustard
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 cups milk
    • 2 1/2 cups shredded sharp cheddar cheese, divided
    • 2 (15-ounce) cans chili with beans
    • 1 cup French-fried onions

    What to Do

    1. Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
    2. In a large pot, cook macaroni according to package directions; drain and set aside.
    3. In the same pot over medium heat, melt butter. Add flour, mustard, salt, and pepper; mix well. Gradually add milk and cook until thickened, stirring constantly. Add 2 cups cheese and continue stirring until melted. Remove from heat and stir in macaroni. Spoon mixture into baking dish.
    4. Pour chili evenly over macaroni and cheese, and top with remaining 1/2 cup cheese. Sprinkle French-fried onions over top.
    5. Bake 25 to 30 minutes, or until heated through and golden.

    You won't need a passport for our Tuscan Chicken One Pot. The heavenly aroma and succulent taste will make you feel like you're sitting at sidewalk bistro in Tuscany. It's the marinara sauce and white wine that really takes this easy chicken dinner recipe to the next level. And one pot recipes are known for their easy clean up, so it really will seem like a vacation in your very own home!

    What You'll Need

    • 1/2 cup all-purpose flour
    • 1 teaspoon salt, divided
    • 1/2 teaspoon black pepper, divided
    • 1 (3- to 3-1/2-pound) chicken, cut into 8 pieces
    • 1/4 cup olive oil
    • 2 green bell peppers, thinly sliced
    • 1 large onion, cut in half then thinly sliced
    • 1/2 pound fresh sliced mushrooms
    • 1 large tomato, chopped
    • 1 (7.75-ounce) can garbanzo beans, drained
    • 2 to 3 sprigs fresh thyme, leaves removed from stems
    • 1 (24-ounce) jar spaghetti sauce
    • 1/4 cup water
    • 1/4 cup white wine (optional)
    • 1/2 cup heavy cream

    What to Do

    1. In a shallow dish, combine flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper; mix well.  Dip chicken into flour mixture, coating evenly.
    2. In a Dutch oven or soup pot over medium-high heat, heat oil until hot.  Add chicken and brown on all sides.
    3. Add remaining ingredients to chicken (including the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper), except for the heavy cream; mix well. Reduce heat to low, cover, and cook 40 to 45 minutes, or until chicken is no longer pink in center.  
    4. Remove chicken to a serving bowl. Stir heavy cream into the sauce and simmer for 2 to 3 minutes or until warm, but not boiling.  Spoon sauce over chicken and serve.

    We are having the above ^^^^ recipe today about 5 pm for an early college GAMEDAY supper.  My ? Penguins are on TV at 5 from UNI.

    The only substitution we had a big package of chicken ? legs so it's a big bunch of drumsticks for Saturday and Sunday football !

    ............well it's later,  the only changes from the recipe we used all dark meat legs which I prefer and omitted the optional wine  which could go either way.   It's a simple but satisfying dish good enough for any weekday meal.   Also had some rolls and butter,. wife thinks a side of rice or noodles would be nice,. I agree.   Good not super great recipe.  B.

    How about a nice Spinach-Artichoke Manicotti, perfect for a weeknight dinner or entertaining or a delicious GAMEDAY side dish.
     
    Baked pasta doesn't get the attention it deserves, but spinach-artichoke manicotti is here to change that. It has all the components of your favorite dip stuffed inside a cheesy, creamy Alfredo-covered manicotti. It's perfect for a weeknight dinner or for entertaining! 
     
    ★ If red sauce is more your thing, then try out our classic Cheese Manicotti! 
     
    YIELDS 6 SERVINGS  PREP TIME:  0 HOURS 10 MINS ...... TOTAL TIME:  1 HOUR 5 MINS
     
    INGREDIENTS
     
    1 (8-oz.) package manicotti
    1 (16-oz.) container ricotta
    1 package frozen spinach, thawed and drained
    1 c. chopped artichoke hearts
    2 c. shredded mozzarella, divided
    Kosher salt
    Freshly ground black pepper
    Pinch of crushed red pepper flakes
    3 tbsp. butter
    2 cloves garlic, minced
    2 tbsp. all-purpose flour
    2 c. milk
    1/2 c. freshly grated Parmesan
    Juice of ½ a lemon
    Freshly chopped parsley, for garnish
     
     
    DIRECTIONS
     
    Preheat oven to 350°. In a large pot of salted boiling water, cook manicotti until al dente, 5 minutes. Drain and let cool slightly.
     
    In a large bowl, combine ricotta, spinach, artichoke hearts, and ½ cup mozzarella. Season with salt, pepper, and a pinch of red pepper flakes. 
     
    Transfer to a piping bag or large resealable plastic bag and make a cut in the corner of the bag.
     
    In a medium skillet over medium heat, melt butter. Add garlic and cook until fragrant. Add flour and whisk until golden and bubbly, 1 minute. Slowly pour in milk and whisk until no lumps remain. Add Parmesan and lemon juice. Season with salt and pepper. Reduce heat and let simmer until slightly thickened, 5 minutes.
     
    Spoon about ¼ cup of sauce on bottom of a 9"-x-13" baking dish. Pipe ricotta filling into manicotti, making sure to fill entire noodle and place in pan. Pour remaining sauce over noodles and top with remaining 1½ cups mozzarella. 
     
    Cover with foil and bake for 20 minutes. Remove foil and bake until cheese is melty, 10 minutes. If you'd like the top to be golden, broil on high for 2 to 3 minutes. Garnish with parsley to serve.

    I add in Pinto beans instead of kidney.  Chopped garlic and onions, 1/2 tsp of oregano.  1/2 tsg of sugar and salt.  Dash of Cayenne pepper.

    That's the great thing about chili there's no right or wrong way to enjoy it,  it's pretty much what you like to do with it.

    This cafeteria style is pretty much a basic and very good  chili recipe.

    It's warming up today about 72° but will be really warm later in the week to near 80...... we're going to do the Thompson's water seal on the deck.  BUCKEYES are on now, BROWNS Sunday at 4:05 !

    Haha…It’s Actually pretty cold given the fact it is October.  September/October it is dry and hot and in the middle of fire season.  At least I pretended it was cold breaking out a windbreaker and eating chili 

  • I was just thinking about what we are planning for our coming GAMEDAY WEEKEND MEALS and I got this email.   We haven't had a Jersey Mike's PORTABELLO MUSHROOM SANDWICH in a long time   -plus-  there's a 90% chance of rain on Saturday which kinda puts a damper on outdoor picnics and grilling.

    We've got good news! You can stop worrying about what you're having for dinner tonight, because this Classic Scalloped Chicken is the best thing on the menu. There's no need to get jittery because this easy casserole recipe is ready in no time, and totally willing to be a part of your weeknight dinner plans. Get ready for something hot and delicious everyone will love! 

    What You'll Need

    • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1/2-inch chunks
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 stick (2 tablespoons) butter, melted
    • 1 3/4 cups chicken broth
    • 1 (12-ounce) jar chicken gravy
    • 8 ounces fresh mushrooms, sliced
    • 1 cup frozen peas
    • 1 (2-ounce) jar diced pimientos, drained
    • 1 1/2 cups instant rice

    What to Do

    1. Preheat oven to 400 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
    2. Season chicken with salt and pepper. In a large skillet over medium-high heat, melt butter; sauté chicken 6 to 8 minutes or until no longer pink.
    3. Remove from heat and add broth, gravy, mushrooms, peas, pimientos, and rice; mix well. Pour into baking dish, cover with aluminum foil, and bake 30 minutes.
    4. Remove from oven, uncover, and stir well. Bake, uncovered, 5 to 10 minutes, or until rice is tender. Serve immediately.

  • Last weeks game day food at my house went south of the border  Rich spicy Asado de Chile Colorado with a double cheese and onion enchilada. I used the Blackstone griddle to toast the arbol and guajillo chiles, sauté the onion and brown a cubed 10 lbs pork butt. Chiles simmered in chicken broth  and then blended with the onion and broth for the amazing red sauce. Cumin, garlic, Mexican oregano, smoked paprika , bay leaf, sea salt , a little touch of peanut butter and a tiny splash of vinegar round out the flavors. Simmered for a few hours until the pork was melt in your mouth tender. Enchilada is 100% cheddar shell filled with shredded pepper jack and onions. One of my all time favorite meals.

    One bite is all it will take to realize we've got the best Sloppy Joe recipe around. We got rid of the same old Joe taste and instead used a savory barbecue sauce, mixing in crumbled bacon, for an extra bold flavor. Because our Bacon-Barbecue Joe's are a make-ahead meal, you can easily serve them up in place of the same ol' burgers at your next backyard summer bash!

    What You'll Need

    • 5 slices bacon
    • 1 pound ground beef
    • 1 small onion, chopped
    • 1 cup barbecue sauce
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 4 hamburger buns, toasted

    What to Do

    1. In a large skillet over medium-high heat, cook bacon until crisp; remove to a paper towel-lined plate. Let cool, then crumble.
    2. In the same skillet over medium heat, brown ground beef and onion 6 to 8 minutes or until no pink remains, breaking up clumps as it cooks; drain off any excess fat. Add crumbled bacon, barbecue sauce, salt, and pepper and cook 5 minutes, or until heated through.
    3. Spoon over toasted buns and serve.

  • Lately on Saturdays 'round here it's been https://www.jerseymikes.com/menu. During the season

    Their Original Italian (#13) a reall clean, great sub puts anything Subway makes to shame. Add a bag of chips... Crunchy Cheetos here, please.

    Plus they have hot sammies as well... Had an OK Philly Cheese. I hear the meatball is very good.

    As for home made? Getting to Fall here so that means Tamale time. I braise pork butt(s) Carribean style, but the transition to TexMex is easy... I watch the wife do it. 😁
