    NJ's TRI-MUSHROOM BORDELAISE for steaks and chops or as a side dish, serves 4

    In a one quart sausepan:
    2 Tbsp butter or margarine
    2 Tbsp flour 
    Cook together in saucepan stirring often until lightly browned 

    Dry ingredients:
    1 1/2 Tbsp minced onions or shallots
    1 Tbsp minced dry pasrley
    1 Bay leaf
    1/4 tsp thyme crushed
    1/4 tsp salt
    1/8 tsp ground pepper

    Add dry ingredients to the butter and flour
    Then slowly stir in:
    10 1/2 oz. Beef broth
    3/4 cup good red wine

    Increase heat to medium high; cook stirring constantly until thick; remove Bay leaf

    Add sauce to mushrooms that have been sautéed in butter; add snipped Parsley to garnish
    1 cup Portabella mushrooms (a very large, rich-flavored cremini mushroom, often grilled, broiled, or sautéed)
    1 cup Button mushrooms (a young unopened white mushroom)
    1 cup Shiitake mushrooms (a large, meaty, black or dark brown mushroom)
    
    *edit - adding a crushed clove of garlic to dry ingredients is optional....and also pretty

    So do you slice up those mushrooms and if so how small?

    EDIT: Never mind-I can see them in the picture-looks great!

    We find you can do it any manner that you prefer.  We like thin sliced on steaks an a little more spoon size for a side dish.  After you ty it you'll have a better idea.

    We originally had this as a side dish at a local restaurant we went to for over 11 years the Springfield Grill in Boardman Ohio when it was run by our friend Michael Alberini.  When he left the new guy changed and reduced the menu.  My wife did our recipe to taste.

    This is basically a Bordelaise dish but we like it on the thicker side and like the three mushrooms rather than just buttons but you will see when you try it.  Like I said it's one of my favorites !  🙂

  • Tonight’s pregame meal.  A nice antipasto salad with an Italian sausage sandwich. Antipasto was fresh mozzarella, red onion, old world pepperoni, kalamatta olives and grape tomatoes tossed in olive oil and a touch of white wine vinegar ,lemon juice and Italian seasoning. Served on some romaine , yellow bell pepper and Parmesan. Sandwich is garlic chaffles, fried onion and peppers, Italian sausage patties, lots of mozzarella and marinara. Garnished with a little red bell pepper , olive bruschetta and a hot Calabrian pepper.GO BROWNS!!

  • Simple use of leftover beef tenderloin for gametime snacks....

    Sliced tenderloin, sliced cucumber, horseradish sauce, & slider buns. I used Woeber's bottled sauce & it was great.

    Oh yes you can't beat Woeblers horseradish sauce and steak.......ummmmm !

    Like it on Arby's RB sandwiches with swiss cheese once in awhile too.

    Today Zatarain's Red Beans and Rice with two Elgin Hot Sausages cut up, browned and thrown in the pot with rest. And the last of a nice Tempranillo from Spain to wash it down.

    I think that is one of your favorite dishes, nice combo with the beans and rice and hot sausage......not bad.

    When you are raised on the La. border of SE Texas, you got to love red beans and rice. Some Texas sausage made in Elgin, Tx. just E of Austin is a perfect compliment. And you can't go wrong with one of Nero's exports from his native soil.???

    PS-and did you know that the area around Beaumont is one of the largest rice growing regions in N. America?

    I was thinking about your grill when I saw his pictures.  Everybody that I know who has one loves them.  They lived next door to us and the parents moved down to Columbus to be near the kids and grandkids.  BIG Ohio State fans.

    ........oh I'll think about the menu.  Brats, sausage ? and sauerkraut is a good start.  Appetizers?  Side dish?  Grill stuff?  Good beer?

    Ok syd (and the rest of you) I  was thinking side dish but also had something like this in mind a bratwurst and sauerkraut dish, great for a BROWNS or BUCKEYES GAME !   (If you want another side dish let me know.  We've made this dish with brats, sausage even kielbasa with slight tweeks.)

    A good old favorite dish BRATWURST STEWED WITH SAUERKRAUT easy to make and delicious. Great for a GAMEDAY or a hearty meal. This version is from the Food Network..... with my notes.
     
     
    Level: Easy. Total time:. 1 hr  15 minutes. Prep time: 10 minutes  Cook time  1 hr 5 minutes. Yield:. 8 to 10  servings

    Wisconsin may be the cheese state, but bratwurst (ground meat sausages that are grilled, or in this case, pan-fried) are the state's culinary claim to fame. Due largely to residents' German ancestry, brats are a common site at butcher shops, restaurants and even baseball stadiums. (Madison, Wisconsin is home to an annual "Brat Fest") Michael Symon's simple recipe calls for the links to be cooked with onions, garlic and tangy sauerkraut and then served on a baguette.

    Ingredients

    2 tablespoons oil

    2 pounds fresh bratwurst links

    2 onions, chopped

    2 garlic cloves, minced

    3 cups chicken stock

    1 tablespoon paprika

    1 tablespoon caraway seed......for us caraway seeds are optional

    4 cups sauerkraut, drained

    2 tablespoons chopped fresh dill

    1 baguette. or other sub type buns, Italian or French are nice

    DIRECTIONS........easy, huh ?
    1. In a large pan, heat oil over high heat. Brown bratwurst in oil and reduce heat to medium. Add onions and garlic and cook until lightly caramelized.
    2.  Add stock, paprika, caraway seeds, and sauerkraut and simmer for 45 minutes. 
    3.  Remove from heat and stir in fresh dill. Serve on baguette or other large buns.
